Shawn Paik/WSN

Nov. 12 is Chicken Soup for the Soul Day. Whether or not you choose to celebrate the holiday, it’s hard to deny that chicken noodle soup is a classic comfort food. Chicken itself can be the ultimate protein, particularly for broke college students. Here are a couple budget friendly chicken soup recipes.

Chicken Lentil Soup

2 tablespoon olive oil

1 cup chopped onion

1/2 cup chopped carrot

1/2 cup chopped celery

1/2 cup chopped potatoes

1/2 cup chopped eggplant

2 cups chopped or shredded chic-ken, cooked

1 pound lentils, rinsed

8 cups chicken broth

Salt, cumin and coriander to taste

Directions: In a pot, saute the onion, carrot, celery, potatoes and eggplant with olive oil on medium heat until soft. Add chicken, lentils, chicken broth, salt, cumin and coriander. Turn the heat to high and bring to a boil. Then, reduce the heat to simmer and cook until lentils are soft.
