The idea that"the Ancient Egyptians kept meticulous records of every event ... yet there is not a single mention of any 'children of Israel' who lived in Egypt" is not a very intelligent one. First of all, Egypt has proved that it only records things the way it wants them to be seen. This is shown in the old writings as well as the recent, e.g., every year Egypt celebrates its victory over Israel in the Six Day War.
The Ipuwer Papyrus gives an almost word for word description of the plagues Egypt suffered.
In addition, it's believed that Israel (i.e., Joseph) would have been there under the Hyksos, and the Egyptians, in their hatred of the Hyksos, obliterated most of those records.
